Homemade Raw Coconut and Goji Chocolate

 

Ingredients

200g cacao butter 

125mL (1/2 cup) virgin coconut oil

1/2 cup maple syrup or honey

2 cups cacao powder

Vanilla pod (seeds scraped)

Handful of goji berries and coconut shavings (or other add-ins of your liking such as other dried fruit & nuts)

 

Method

Gently melt cacao butter and coconut oil together in a stainless steel or glass bowl over a saucepan of gently boiling water. Reduce heat so that it just melts the butter and oil, do not allow to boil.

Allow to cool slightly and sift in cacao powder and stir. Stir in maple syrup/honey until well combined. Add in vanilla seeds, coconut shavings and goji berries.

Pour into small silicon moulds and pop in the fridge to set for a couple of hours.

Makes approximately 30 small chocolates.
